We are proud to present our Classic Method Sparkling Wine made from Trebbiano Verde grapes.

Our well-drained, loose soils and ideal exposure inspired us, in 2018, to begin an innovative and exciting new project: producing a Classic Method sparkling wine using the native Trebbiano Verde variety, offering a fresh interpretation of this ancient grape. Since then, each harvest has been a new challenge — a renewed dialogue between the vine, the people, and the land.

VINIFICATION
Gentle destemming and cold soft pressing.
ALCOHOLIC FERMENTATION in stainless steel at a controlled temperature.
SECOND FERMENTATION in the bottle using the Classic Method, aged in the cellar caves at 12 °C.
AGING ON THE LEES for two years, with continuous remuage of the bottles.
DISGORGEMENT performed by hand.

COLOR
Thousands of fine, persistent bubbles create a soft, compact foam. In the glass, a golden-yellow hue with bright reflections captures the eye.

AROMA
Balanced notes of apple and almond blend with hints of aromatic herbs and bread crust. The finish reveals a distinct and captivating minerality.

TASTE
Acidity and savoriness complement each other beautifully. The body is elegant, with a pleasant touch of bitterness leading to a long, enjoyable finish.

FOOD PAIRING
Often enjoyed as an aperitif, but we recommend trying it with smoked salmon, herring, and all kinds of shellfish.
