Cesanese is a grape variety of very ancient and mysterious origins, already cultivated in the Roman countryside as far back as the 8th century BC. It has always been considered a “generous” variety, which is why our winegrowers tend it with dedication and respect. For the ancients, Cesanese wine was an ideal companion for convivial occasions and celebratory toasts; today we want people to discover it for its fruity notes and its extremely pleasant drinkability.
soft destemming-crushing, brief cold pre-fermentation maceration of the grapes
in stainless steel at a controlled temperature, frequent racking and daily pump-over
in stainless steel tanks for at least 6 months, with a small portion in Slavonian oak barrels
in bottle before release
Intense notes of wild red berries, with hints reminiscent of a floral bouquet of violets and white iris
a pleasant and elegant structure, young but smooth and mellow tannins.
With traditional Roman main courses such as white meat meatballs, saltimbocca alla Romana or lemon veal scallopine.
