The terracotta amphora is the oldest wine vessel in history, and it represents a philosophy of winemaking even before being a simple container. Aging in amphora is a perfect union of ancient tradition and contemporary research into wines capable of preserving and enhancing the authentic, unique character of the grapes and the terroir.
Destemming of the grapes followed by immediate filling of the amphorae. Continuous punch-downs during fermentation.
At the end of fermentation the amphorae are sealed airtight. The must remains in the amphora for at least 6
months, after which racking takes place.
carried out using indigenous yeasts
in stainless steel for 1 month, then in bottle before release
complex and elegant, dominated by varied balsamic notes
full-bodied and aromatic, with evident persistence and elegance
Pairs well with traditional Roman cuisine; to name just one dish, fried salt cod fillets (“filetti di baccalà”).
